Cow variants don't just spawn in any random biome. These animals prefer an overworld with mostly grassy biomes except for mangrove swamps, pale gardens, meadows, and snowy plains. They also require durable grass blocks to spawn on and spawn in small herds, each with a set spawn rate for each biome. Minecraft cow variants will only spawn when they reach certain levels and spawn in herds of different numbers. For the Java Edition, herds of four cows spawn at level 9 or higher. In the Bedrock Edition, herds of 2 to 3 cows spawn on grass blocks at level 7. Always look out beforehand for the World Generation because cows rarely spawn after this event.

They carry a light brown fur with forward-pointing dark horns.

Warm species are covered with reddish-brown fur and upward-pointing dark horns. They have similar traits to the African cow breed Ankole, which also have reddish-brown coats and upwards-pointing horns.

These species prefer the green biomes and seem a little different, with small dark horns, and white blotches. What's more interesting is that they are referred to as Classic Minecraft cows. The last update is the Minecraft Snapshot 25w05a, and it has these cows spawning in flower forests, birch forests, old-growth birch forests, and swamp biomes. It is rumored that the real-life temperate cows are inspired by the French cow breed Maine-Anjou, which have similar fur colors and patterns.
These species spawn in Mushroom Field biomes. These biomes are regions generated as an island dominated by mycelium and giant mushrooms. Red mooshrooms find it a habitat and have no real-life counterparts due to their unusual nature.
These cow variants do not spawn naturally, not even in Mooshrooms Fields biomes. You'll only get these brown species when lightning strikes with red Mooshrooms. It may also spawn on rare occasions if two red Mooshrooms breed.
All Minecraft 1.21.5 cow variants moos and huffs, especially while wandering around their respective biomes. All species have similar behavioral traits and will avoid water unless they're following their keeper. These pretty cautious animals have gentle behavior, always looking out for rails and falls that may cause damage.
